Pineapple Salsa Grilled Chicken


  • 1 lb. boneless skinless chicken breast
  • 2 cups chopped pineapple
  • 1/4 cup olive oil
  • 1 avocado, diced
  • 1/4 cup red onion, diced
  • 2 tsp. honey
  • 1/4 cup chopped cilantro
  • juice of 4 limes
  • salt & pepper to taste


  1. Prepare marinade by whisking together the juice of 3 limes, cilantro, olive oil, honey and salt in a large bowl.
  2. Add chicken to marinade, cover and place chicken in refrigerator for at least 2 hours.
  3. Grill marinated chicken on medium-high heat for about 8 minutes on each side, or until cooked through.
  4. Prepare salsa while chicken is grilling. Combine pineapple, avocado, red onion, remaining lime juice, remaining cilantro and salt to taste.
  5. Spoon salsa over grilled chicken before serving.
